I started my journey with Carolina sunshine wellness with Carey on January 1, 2025. In the past year, I was diagnosed with an unspecified autoimmune disease, which totally caught me off guard. Meet Carey Shannon

Carey Shannon is a wellness and joyful living educator, functional wellness coach, author, and former college professor and program manager of an Allied Health program. She holds a Bachelor’s and Graduate Degree in Education and is a Registered Medical Assistant with advanced studies in anatomy and nutrition. Carey also holds a Career Technical Education credential in Health & Medical Technologies, a Certificatinion in Health and Wellness, and advanced training in telehealth and blended learning. She is currently pursuing her Doctorate in Functional Health.

As the founder of Carolina Sunshine Wellness, Carey integrates functional wellness principles with compassionate coaching to help individuals reduce inflammation, support autoimmune wellness, and build joyful, sustainable habits for whole-person healing.

The WHY Behind Our Journey-How Diet and Lifestyle Changes Combatted My Inflammation and Auto Immune Disease:

Years ago I had taken on a new full time job teaching 1st grade in my community with an extremely challenging group.  Little did I know at the time the stress and chaos that my body would endure.  I made it through the year, but as soon as summer arrived, I became ill and had many strange symptoms including extreme fatigue, joint pain, a swollen hip and rash on my face and breast.  The doctor visits started, and they couldn’t figure out what was causing the symptoms.  After many attempts at different treatments, a possible inflammatory breast cancer diagnosis, and a high dose of a long term steroid regime, I was diagnosed with an autoimmune disorder.  For me the steroid treatment was my motivation to look for alternative methods to heal my body, as I didn’t ever want to take steroids again!!!  This led me to a lot of research on alternative methods to treatment and ultimately to discover how nutrition, exercise, faith, meditation, sleep and stress reduction are the key factors to repairing the body!

Over the years I continued to work on changing my habits and began to explore changes in diet along with other alternative methods.  As I progressed in my experiments, I realized that there was a definite correlation to how I was feeling.  Fast forward to several years later … I had slacked off a bit on watching what I was eating, reducing stress etc.  And, not surprisingly the symptoms started to gradually return until once again, I was looking at doctor visits and medications.  I was faced with the reality that this had to be a lifelong lifestyle change for me and my family!  I was all in!  It was time to clean out my pantry, build a plan, stock up on all the right foods, prep and start our family’s journey to wellness! 

I continued to support friends and family members in the years to come, and have seen much success! I am excited to team with you in your new wellness journey!
